Quick and easy muffins to whip up for breakfast (I just made them now, it’s 8pm🙈)… it is a little quicker than Banana bread which you have to bake for up to an hour. This recipe makes 12-15 muffins that cook in 15-20 minutes. I only had small muffin cases so mine where quite small…
What you’ll need:
- 3 ripe bananas and one for decoration
- 1 egg
- 1/3 cup of milk
- 1/4 cup granulated sugar
- 1/4 cup brown sugar (Sugar can be replaced with 1/2 cup of apple sauce)
- 1 tsp. Vanilla extract
- Dash of cinnamon
- 1 cup flour (or 1 1/2 cups wholemeal flour)
- 1/2 cup whole meal flour
- 1 tsp baking soda
- 1 tsp salt
- 1/2 cup of dark chocolate chips
Method:
Preheat the oven to 180°, line a cupcake baking tray with as many cupcake cases as you need.
Mash the 3 bananas in a large bowl. Add the egg, milk, sugar, vanilla extract, cinnamon.
In a separate bowl add the sieved flour, wholemeal flour, salt and baking soda. Add this to the wet ingredients.
Add in the chocolate chips and chopped walnuts. Do not over mix the batter. Spoon the mixture evenly into the cakes and add a slice of banana to the top of each muffin.
Bake for 15-20 minutes or until you pierce them with a little wooden stick and it comes out clean.
Eat them, eat them all 😊
